Celebration Ham Normandy

(Callan bacon product used: Half Horseshoe joint)

Ingredients:

Half horseshoe joint
Roughly chopped onion
1 carrot
Handful of cloves
1 pint cider
¼ pint cream
4 eating apples
2 tea sp Dijon mustard
2 table sp icing sugar
2ozs butter
Seasoning
Pinch of nutmeg

Method:

  1. Place ham in large saucepan & place vegetables, cloves together with ½ pint cider, 1  pint of water. Bring to the boil & simmer for 2-2 ½ hours. Cool for a few minutes.
  2. Remove tough outer skin. Place ham on a tray. Score fat in a criss cross fashion & sprinkle with icing sugar. Place under a grill for a few minutes.
  3. Cover with tin-foil and rest for 10 minutes before carving.
  4. In 2ozs of butter fry off 4 sliced & cored eating apples for 3-4 minutes. Add mustard & ½ pint of cider and let it bubble. (reduce) for 3-4 minutes.
  5. Add cream. Seasoning but meg.

Crunchy Bacon Hash Browns on Stir-fried Cabbage with Mushroom, Onion & Bacon

Serves:4

(Callan Product used: Half-Moon Gammon with honey glaze)

Ingredients:

1 piece Half-Moon
Gammon
4 potatoes
Handful Parsley & Chives
3ozs grated Cheddar
2 finely chopped Red Onions
2 table sp oil(sunflower)
1 tea sp sesame oil
6 button mushrooms (sliced)
4 streaky rashers (fine dice)
1 lb savoy cabbage (shredded)
salt & black pepper
2 egg whites
2 tea sp wholegrain mustard

Crunchy Bacon Hash Browns on Stir-fried Cabbage with Mushroom, Onion & Bacon

Method:

  1. Put gammon in pot & cover with water. Bring to the boil & simmer for 45-50 minutes.
  2. Boil potatoes in their skins until just soft. Cool for a few minutes & then peel & grate them into bowl.
  3. To this add diced Gammon, chopped herbs, grated cheese, mustard, salt& pepper, 1 chopped “red onion”, 2 egg  whites & 2 tea sp mustard.
  4. Shape into canes & shallow fry on both sides for 2-3 minutes. Put on baking sheet & place in oven @ 190C for 10 minutes.
  5. Meanwhile – crack on with the bacon & cabbage stir fry. Heat both oil in a wok. Stir-fry onions, mushrooms & rashers for 3-4 minutes. Add finely shredded cabbage for another 3-4 minutes. Season. Place on plate &top with bacon has browns.

Gammon Pineapple Mushroom Pie

Gammon Pineapple Mushroom Pie

(Callan bacon product used: Half moon gammon joint)

Ingredients:

Gammon Joint
1 leek (cleaned & chopped)
6 mushrooms (sliced)
½ pineapple (small diced)
1 table sp balsamic vinegar
1 dessert sp brown sugar
½ pint cider
2 tea sp mustard (wholegrain)
Seasoning
½ pint cream
Puff pastry
Beaten egg for glaze

Method:

  1. Remove plastic from gammon & put in a pot with boiling water & simmer for 30 minutes. Remove & cool.
  2. When cool chop into dice. In a pan, put in a little olive oil. Fry off leeks & mushrooms for a few minutes. Then add pineapple, balsamic, sugar, mustard, cider, seasoning & let it bubble for 5 minutes. Then add cream & diced gammon.
  3. Pour into pie dish. Cut puff pasty to fit the top. Egg wash pastry & put in oven @ 190C for 10-15 minutes until pastry is browning & puffed up.

Gammon Steak with Pesto

(Callan bacon product used: Gammon Steak)

Ingredients:

Gammon Steak
Tub of pesto
2 balls mozzarella
2 table sp balsamic
1 tea sp brown sugar
8 baby potatoes
Handful sun-blush tomatoes
Handful of parsley

Gammon Steak with Pesto

Method:

  1. Place gammon steaks on grill pan & place under grill on high & cook on one side for 5-7 minutes. Turn over & cook on other side for 5 minutes. Lower grill heat to 3.
  2. Remove tray & spread gammon steak with pesto. Break 1 ball of mozzarella onto each steak. Top with tomatoes. Sprinkle with balsamic & sugar. Place back under grill until bubbling.
  3. Boil baby potatoes until tender, strain. Put sun-blushed tomatoes & their oil with parsley in blender & blitz. Stir into warm potatoes.
