Honey and Mustard Fillet with swede & Smoked Bacon cake & a cider & apple gravy

(Callan bacon product used: Fillet of Ham)

Ingredients:

Fillet of Ham
2 tea sp wholegrain mustard
2 tea sp brown sugar
300gm peeled & diced turnip
Knob of butter
4 smoked streaky rashers
(Cut in strips & cooked until crisp)
160gm mashed potatoes
2 spring onions
50gm grated parmesan
Salt & pepper
100ml cider
2 granny smith (cored & chopped)
1 red onion (chopped)
1 table sp balsamic vinegar
1 dessert sp brown sugar

Method:

  1. Remove plastic from ham & put in a pot of boiling water. Simmer for 1 hr. Remove & cut off outer rind. Spread with mustard  brown sugar & put in oven @ 190C for 30 minutes.
  2. Cook turnip until tender & tip into a bowl with butter, rashers, mashed potatoes, parmesan, spring onion & seasoning. Shape into cakes & dust with a little flour. Fry in a little olive oil until golden brown.
  3. For the gravy – Fry off in a little oil 1 chopped red onion for a few minutes. Then add apple, balsamic, brown sugar & cider. Season. Let it bubble for a  few minutes.

Loin of Bacon baked on Chorizo & Vegetable Casserole

(Callan bacon  product used: Loin of Bacon)

Ingredients:

1 loin of bacon
1 chorizo sausage (cubed)
2 red onions
2 cloves garlic (chopped)
2 carrots (chopped)
¼ turnip (chopped)
1 tin cheery tomatoes
1 tin chickpeas (rinsed & drained)
8 baby potatoes (1/4)
1 tea sp smoked paprika
1 carton passata
Pinch of sugar
Seasoning

Loin of Bacon baked on Chorizo & Vegetable Casserole

Method:

  1. Remove loin of bacon from plastic & place in casserole dish.
  2. In a pot in a little oil – Fry off chorizo until it is crispy. Remove & put in casserole dish. In the same oil fry off onion, garlic, carrot & turnip for a few minutes. Then add potatoes, smoked, paprika, cherry tomatoes, chickpeas, carton of passata, sugar & seasoning.
  3. Pour over bacon & chorizo in casserole dish & cover with tin foil.
  4. Place in oven @ 190C for 1 ½ hours.
  5. Remove bacon & cut strings. Rest. Put on serving dish. Surrounded by casserole.
